Patrice Ginestière Patrice Ginestière, Chef, trained at Longcol, a Relais & Chateaux hotel, located in Najac-Aveyron in France. Then he went to the UK and worked there for 4 years for the Hotel du Vin group in Winchester, Bristol and Birmingham. There he trained from chef de Partie to second chef. Wanting to hone his French gastronomic knowledge and skills, Patrice went back to France, this time to Salon de Provence where he worked under a Maître Cuisinier de France.
Silvio Praino Silvio is a professional restaurateur with a proven track record who learned his craft in the traditional way in Italy, Germany and Switzerland. A wine connoisseur with well-accomplished organisational skills and a passion for the highest levels of customer service.
Before joining The Vintners Rooms he was proprietor of 'Silvio's" & "Scalini" Restaurants in Edinburgh, both renowned for authentic Italian food, fine wines and sympathetic ambience, and both earning a recommendation in the Michelin Guide and Good Food Guide in '96, '97 and '98. (We cannot also afford to forget his renowned cellar of the best Italian Wines and old vintages with some 45 vintages from 1935 -1995!).
Looking further afield he also developed, before arriving in Edinburgh, 'Silvio's Restaurant' in Sydney, Australia, where he established a reputation for high standards and service attracting strong media interest from journals such as the Sydney Morning Herald. Whilst in Sydney he also did a stint in the demanding Hilton Hotel and prior to that, he was in Scotland where he worked in Denzler's and Tinelli's, both in Edinburgh and also at the famous Gleneagles Hotel in Perthshire. All in all an excellent track record from his start in the trade in Milan and then as Chef de Rang in the 2 Michelin Star restaurant "Tantris", reputed the best in Germany in 1976 and among the best in Europe to date.
